A path between tea fields

Sourced directly from growers, mainly in Kagoshima.

Our tea is harvested and processed in Japan. We buy directly from growers, mainly in Kagoshima, without an intermediary. Kagoshima’s warm climate supports a wide range of cultivars; the origin and cultivar are stated for each product.

Our representative visits the farms in person to check how the tea leaves are growing. We visit growers at least every two months, placing value on conversations in the fields as well as the purchase itself.

These regular visits and conversations sustain our relationship with the people growing the tea and support a steady supply throughout the year.

The tea behind the flavour

Growing tea under shade

Before harvest, tea gardens are covered to reduce sunlight. Shading affects flavour and the balance of theanine, associated with umami, and catechins, associated with astringency.

From tencha to fine powder

Matcha is made from tencha. The leaves are steamed and dried, then stems and veins are removed before the tencha is ground into fine powder. Understanding these steps helps when considering colour and flavour.

Balancing umami, sweetness and bitterness

Bitterness is a natural part of matcha. In higher grades it balances sweetness and umami; in processing grades it remains perceptible in milk and confectionery. Choose for the balance in the finished application, rather than low bitterness alone.

For drinking, lattes or confectionery

Will the tea be drunk on its own, mixed with milk or used in confectionery? Each application calls for a different balance of colour, aroma and flavour. Check single-cultivar or blended, and organic or conventional, on a product basis when selecting candidates.

This explains general matcha-making and flavour characteristics; production details and flavour differ by product.
